Prairie Bay’s Side Dish food truck was awarded $30,000 from the University of Minnesota Extension Central Regional Sustainable Development Partnership to support the development of sustainable agriculture and food systems across the central Minnesota region.
In addition to its regular food truck activities, the Side Dish will serve as a chef-driven mobile classroom, providing demonstration and instruction on the preparation of wholesome local foods within the central region to increase nutrition awareness and support local farmers and producers.
Grant funds from the Central Partnership will be used to support these educational presentations throughout the region, with 20 outings slated for the summers of 2013 and 2014.
Within the five-county region of Cass, Crow Wing, Morrison, Todd and Wadena counties, more than 55,000 or one-third of the residents are impacted by having low-access to food as determined by the USDA. The Side Dish will work to address food access by visiting these areas, encouraging the provision of healthy and local food options while building more sustainable communities.
