1/3 cup olive oil
1/3 cup crumbled blue cheese
1/4 cup white wine vinegar
1/4 cup chopped fresh parsley
1 bunch celery trimmed and thinly sliced crosswise (6 cups)
Salt and ground black pepper, to taste
Whisk together the olive oil, blue cheese, vinegar and parsley in large bowl. Add sliced celery and mix well. Season with salt and pepper, to taste.
Chill for an hour or two before serving
