Slow Cooker Chicken Barbecue
6 large boneless skinless chicken breasts, cut into quarters
1 bottle good barbecue sauce
½ cup Italian Dressing
¼ cup brown sugar
2 tablespoons Worchestire Sauce
½ cup diced onion, red or white
1 teaspoon thyme
½ teaspoon salt
½ teaspoon pepper
6-8 hamburger or brat buns
Lettuce & tomato for toppings, if desired
Swiss cheese, if desired
Place chicken into slow cooker. In medium bowl, combine sauce, Italian dressing, sugar, Worchestire sauce, onion thyme, salt and pepper. Mix well and pour over chicken.
Cover and cook on high for 3 hours. Remove chicken and shred with fork. If the sauce is too thick, add 2 tablespoons to ¼ cup of water. If the sauce is too thin, mix 2 tablespoons of flour into ¼ cup water. Slowly add the flour mixture to the sauce and stir well.
Put chicken back in with sauce and mix well. Turn the slow cooker down to low. Cook for an additional 1 to 2 hours until chicken is well cooked and has absorbed some of the sauce.
If desired, lightly toast buns. Put a heaping amount of chicken into each bun. Top with cheese, lettuce and tomato.
