1 cup canola oil
2 cups sugar
1 teaspoon vanilla
3 cups apple, peeled and diced
3 cups all-purpose flour
1 teaspoon cinnamon
1/2 teaspoon ginger
1 teaspoon baking soda
1 teaspoon salt
1 cup chopped walnuts (optional)
Preheat oven to 325 degrees.
In a small bowl, combine the oil, eggs, sugar, and vanilla, set aside. In another bowl, sift together the flour, cinnamon, ginger, baking soda, and salt.
Add a small amount of the dry ingredients to the oil mixture and then mix. Continue the process until all of the dry ingredients are mixed into the oil.
Add the apples and, if desired, add nuts. Mix just until combed.
Lightly spray 2 regular bread loaf pans with non-stick cooking spray. Pour the mixture into the two trays. Bake for 1 hour 10 minutes (70 minutes).
