Tuscan Grilled Salmon
2 salmon filets, about 3 pounds
¼ cup olive oil
1 tablespoon balsamic vinegar
1 tablespoon lemon juice
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon dried rosemary
2 teaspoons minced fresh garlic
½ teaspoon coarse salt
½ teaspoon fresh cracked pepper.
Make the marinade by combining the olive oil and the next 8 ingredients in a small bowl. Pour the marinade into a large pan and place the salmon filets flesh-side down into the marinade. Let the fish marinate for up to an hour.
Place the salmon skin-side down on a double sheet of aluminum foil and grill over low, indirect heat until done to your liking.
