Chef's Hat: Pass the potato salad

The calendar shows that we are past Memorial Day, so we are now officially into the summer season. Hopefully, the weather will cooperate for all of those upcoming graduation parties, family cookouts and friendly get-togethers.

Potato salad is a great side commonly served at summer cookouts. Potato salad goes well with pretty much any type of meat, whether it’s grilled, baked or broiled. Many potato salads are little more than boiled potatoes, mayonnaise, celery, onions and, if you’re lucky, a bit of seasonings to add some flavor.

Forget about those old style, creamy, boiled potato type dishes. Potato salads can have a bold, spicy flavor and still be a great accompaniment to almost any main dish.

There are many ways to add pizzazz to a boring batch of potatoes. From adding some spice to grilling the potatoes, that bland side dish can be the hit of the party.

So forget about those mayonnaise-soaked potatoes and try something with a bit more bite the next time you’re looking for a side dish to go with that grilled burger or steak.
