2 tablespoons honey
3 tablespoons soy sauce
1 tablespoon olive oil
Juice of one lime
1 pound chicken breasts, skinless and boneless, cut into 1/2-inch chunks
In a small bowl, whisk all liquid ingredients together until completely blended. Pour mixture into a freezer bag and add in chicken strips. Reseal bag and gently shake to cover chicken strips. Allow to marinade for 2 hours.
Place oven rack 6 inches from broiling element. Turn the oven on to broil.
Remove chicken from marinade and thread onto metal skewers. Place the skewers onto a pan and broil for 5 minutes. Remove from oven and turn the skewers. Return to oven and broil and additional 6 to 8 minutes until chicken juices run clear and chicken is fully cooked.
If desired, chicken can also be grilled. Grill on medium to high heat for 5 minutes and turn chicken. Then grill an additional 5 to 6 minutes until juices run clear and chicken is fully cooked.
