St. Paul's lefse crew supports Faith in Action

What do you get when you take 425 pounds of potatoes, 200 pounds of flour, 15 quarts of oil, 15 quarts of evaporated milk, 7 pounds of sugar and 2 pounds of salt, and grill it to perfection with 600 hours of labor?  

Would you believe 324 dozen lefse? That would be a stack of lefse 27 feet high or roughly 3,000 square feet of the Scandinavian delicacy.         

St. Paul’s Lutheran Church in Hackensack has made its lefse project a long-standing tradition, using the proceeds to support local charitable causes through its Fellowship Committee. This year, part of the lefse making fund goes toward St. Paul’s partnership commitment to Faith in Action of Cass County.

Many people helped with the lefse project this year. Costs were kept to a minimum by an opportunity to dig free potatoes led by Jerry Watzke and Terry Watzke, with help from digging crew members Harold Haskin, Ron Brauer, Loralee and Russ Torkelson, and Lois Bohanon.

Around two dozen people helped in the kitchen throughout October and November, mixing and rolling out lefse.

“If we were paid for our services we wouldn’t make minimum wage, but the amount of fun and fellowship that we have is invaluable,” said one new member.
